Moli ka Paratha


-
2 cups flour, white or whole wheat  
-1 tsp. salt
- Water for mixing
For filling:
- 3 bunches white radish (mooli)
- 3 green chilies, chopped

- 1\2 cup coriander leaves, chopped
-
1 tsp. salt
-1 tsp. chili powder
- 2 tbsp. ghee
- Ghee or butter for shallow frying

1. Combine flour and salt in a medium bowl. Gradually add water to bind the mixture together. Knead well for a few minutes until dough leaves the sides of the bowl clean. Cover with a damp cloth and keep aside for 15 minutes.
2. Meanwhile prepare the stuffing. Wash the radish and grate them, using a vegetable grater. Place the grated radish in a colander, add 1 teaspoon salt and mix well. Keep aside for 15 minutes.
3. Place a small amount of radish between the palm of your hands and press to squeeze out water. Put radish in a bowl, add green chilies, coriander leaves, salt, chili powder and 3 tablespoons ghee and mix well. Divide filling into 6 equal parts.

 Divide dough into 12 round balls. Flatten each ball slightly. Put one portion of filling in centre. Place the other round over to cover the filling and press the edges together to seal.
5. Dip the stuffed round into some dry flour to prevent it from sticking to the surface and rolling pin.

Roll out each round on a lightly floured surface into a round 6 inches (15 cm) in diameter.
7. Cook one at a time on a hot griddle over medium heat. Put about 1 or 2 tbsp ghee around the edge. Turn gently. Cook until sides turn golden brown. Serve with yogurt and lemon or mixed pickle.

Potato peels can be made into tasty wafers. Immerse the peel in warm water to which a pinch of salt is added and then dry it. Deep fry till crisp and you have delicious potato wafers.

Children who use an indoor swimming pool may be at increased risk of developing asthma, research suggests.
The Belgian study found rates of childhood asthma and wheeze rose by around 2-3% for every indoor swimming pool per 100,000 people.
The researchers believe the key could be exposure to chlorine, which is used to keep pools clean. The study, by the Catholic University of Louvain, appears in Occupational and Environmental Medicine. The researchers say the long-term effects of chlorine by-products on children's respiratory health should be thoroughly evaluated, and that pools should be properly ventilated and levels of chlorine by-products regulated. A study published three years ago by the same team produced evidence that chlorine in pools can react with sweat or urine to create harmful fumes which can damage lungs. They found found that children who regularly attend indoor pools accumulate proteins known, in high quantities, to cause damage to cells in the lungs. In the latest study, they analysed the rates of wheezing, asthma, hay fever, allergic rhinitis and atopic eczema, reported in a study of almost 190,000 13 and 14-year-olds from 21 countries across Europe. They then compared these rates with the number of indoor chlorinated swimming pools per 100,000 of the population in each of the countries.
Access differences

The number of indoor pools varied by a factor of 20 between Eastern and Western Europe, ranging from one pool for every 50,000 people in Western Europe to one for every 300,000 people in Eastern Europe. The results showed that, even after taking account of factors such as wealth, climate and altitude, there seemed to be a strong link between asthma and related disorders and potential access to swimming pools. The rate of wheezing rose by 3.39% for every additional indoor chlorinated swimming pool. Similarly, the rate of asthma rose by 2.73%. The researchers argue that the rise of asthma in Western Europe could at least partly be attributed to the increasing exposure of children to the by-products of chlorine in the air and water of indoor swimming pools. A spokesperson for the charity Asthma UK said: "Swimming is an excellent form of exercise for children with asthma as the warm humid air in the swimming pool is less likely to trigger asthma symptoms. "We do recognise, however, that the chemicals present in heavily chlorinated pools may be important in making the airways more irritable and further research is needed to understand this association."

 Never Feel Helpless! 
Dear Folks,
Hope you all are “enjoying” the summers. Today, I would like to share with you an anecdote about a donkey, the animal that is presumably taken to be stupid.
One day a farmer's donkey fell down into a well. The animal cried piteously for hours as the farmer tried to figure out what to do. Finally, he decided the animal was old, and the well needed to be covered up anyway; it just wasn't worth it to retrieve the donkey.  He invited all his neighbors to come over and help him. They all grabbed a    shovel and began to shovel dirt into the well. At first, the donkey   realized what was happening and cried horribly. Then, to everyone's   amazement he quieted down.  A few shovel loads later, the farmer finally looked down the well. He was astonished at what he saw. With each shovel of dirt that hit his back, the donkey was doing something amazing. He would shake it off and take a step up.  As the farmer's neighbors continued to shovel dirt on top of the animal, he would shake it off and take a step up. Pretty soon, everyone was amazed as the donkey stepped up over the edge of the well and happily trotted off!
What do we learn from this parable? Life is not always very pleasant. Sometimes things are thrown our way that try to drag us down. The way out is to shake the dirt/ the unpleasant things thrown our way off and take a step up. By this way, we will be turning each of our troubles into a steppingstone. We can get out of the deepest wells just by not stopping, never giving up.
So friends, don’t fret in times when you feel helpless. Just give the situation an analysis from a different angel, and voila, you can the seemingly unfavorable condition into your favor.
