Gajar Ka Halwa |

- 1 kg. carrots, peeled and
grated
- 2 cups sugar
- 3\4 cup ghee
- 2 cups khoya or milk
powder
- 100 g. blanched
almonds,
cut into slices
- 50 g. unsalted pistachios
- 50 g. unsalted and roasted cashew nuts
- 25 g. raisins
- 7-8 whole cardamoms
- 1 tsp. ground cardamom
- silver leaf (varak) for decoration
- few drops of kewra
1. Put carrots and ground cardamom in a heavy based
large pan. Cover the pan with a tight fitting lid and cook
over very low heat for about 30-40 minutes or until the
carrots are tender and all the water has absorbed.
(no need to add water as the carrots will release
their own water. (Add 1\4 cup water if the carrots stick to
the bottom of the pan)
2. Heat
ghee
in a heavy based pan, add cardamoms. Stirring all
the time, fry for a couple of minutes. Add carrots and stir
fry for few minutes. Add sugar and while stirring cook
uncovered for 10-12 minutes, until all the water from the
sugar has evaporated.
3. Add almonds, pistachios,
raisins and cashew nuts. Stir. Sprinkle in khoya or
milk powder milk and mix it really
well. Add kewra and stirring frequently cook for 3-4
minutes. The halva is ready when the ghee begin to separate
and has glossy shine. Transfer to a serving dish and
decorate with pistachio and silver leaf. Serve hot.

Sunken cake?
Sunken centre in a cake could be due to too much sugar,
shown by a sticky centre and very brown crust. It could also
be due to too musch baking powder or undercooking in a low
temperature oven.

May Cut
Heart Disease |

Researchers have produced more evidence that dark
chocolate may help to reduce the risk of serious heart
disease.
They found eating a few squares a
day may stave off artery narrowing and hardening in smokers
by countering the disruption caused by their habit. Smoking
compromises the activity of both endothelial cells, which
line the artery walls, and platelets, which are involved in
blood clot formation.
The research, by University Hospital, Zurich, is published
in Heart.
The researchers compared the effects of dark (74% cocoa
solids) and white chocolate on the smoothness of blood flow
in the arteries of 20 male smokers.
Before eating 40g of chocolate, smokers were asked to
abstain from other foods rich in beneficial antioxidants,
such as onions, apples, cabbage, and cocoa products for 24
hours.
After two hours, ultrasound scans revealed that dark
chocolate significantly improved the smoothness of arterial
flow - an effect which lasted for eight hours.
Blood sample analysis also showed that dark chocolate almost
halved platelet activity.
Antioxidant levels rose sharply after two hours. White
chocolate had no effect on endothelial cells, platelets, or
antioxidant levels. The researchers are convinced that the
key is the high antioxidant content of dark chocolate, which
contains more per gram than other food and drink laden with
the substances, such red wine, green tea, and berry fruits.
Research published last year by the University of California
found antioxidant-rich flavonoids in chocolate helped the
blood vessels expand.
Warning
Dr Charmaine Griffiths, of the British Heart Foundation,
said: "There is some evidence that when eaten in small
quantities, dark chocolate might have some beneficial
effects on blood vessels, but as yet no study has
investigated the long-terms clinical effects - and this new,
small study from Switzerland, does not change that.
"The key thing to remember about such studies is that
chocolate is a bigger part of the problem than the solution.
"Whilst dark chocolate is higher in anti-oxidants, all forms
of chocolate are very high in calories (typically about 500
calories per 100g) and contain an average 30% total fat.
"We are certainly not suggesting people never eat chocolate
- everyone can enjoy a treat from time to time.
"But there are much better ways of improving your heart
health, such as eating a varied diet, including at least
five portions of fruit and vegetables a day.
"And whatever they eat, the biggest step the smokers in this
study could make to reduce their risk of heart disease would
be to give up.

in earthquake affected and have provided quality

medical volunteers.

have obviously go back for their
responsibilities. This has created severe

Lessons to Learn
Dear all !!!
So we are approaching another year's end. As the year
closes, we shall look back at all that happened this year,
take an account of what has been going around the globe, in
what areas the human race has worsened, in what improved,
and most importantly analyze and account our own selves.
Year 2005 is not ending at a very happy note, especially for
our country because of the disastrous earth quake of the
black Saturday of 8th October that has claimed thousands of
lives and left many of our dear countrymen as sufferers.
Also, around the planet, we see that the evils of war,
poverty and racial discrimination has continued to devour
people and kept spreading its malicious claws. Peace across
the world yet seems to be an elusive dream. Decline of
morals and ethics is another tear-bringing thing to see.
While what is past cannot be undone, one must never lose the
chance of learning from history. We must see what went wrong
and where, how that mistake is to be avoided from being
repeated, what good has been left undone etc.
Year 2006 will set in with many potential risks hanging over
the world including sky rocketing inflation, higher fuel
prices, international conflicts, forecasted natural
disasters, to name a few. On a positive note, there is much
to hope for including advancement in science, new medical
discoveries, IT progress bringing us new gadgets and so
forth.
So as the sun of year 2005 sets and the sun of year 2006
rises, let us pray that it will be a much better year for
everyone. Let us hope and work for 2006 to be a better year,
bringing humans their long lost glory.
