Kulfi Pistay Wali
(Pakistani Ice cream)

- Condensed milk 397g
- Evaporated milk 550ml
- Nestle cream 1/2 can (45g)  for machine and one full can for beater.
- Breakfast bread two slices, brown edges removed and cut into small pieces.
- Pistachio 2 tbs. ground & 2 tbs. sliced.
- Cardamom 1 tsp. ground.
- 1/2 tsp. kewra (screwpine)

1. Pour milk, cream and bread in the blender. Blend for few seconds.
2. Add ground pistachio, cardamoms and kewra in the milk mixture.
3. Pour mixture in the Ice cream machine (manual or electronic) and make ice cream according to manufacturer's instructions.
4. If you do not own a ice cream maker, pour the mixture into a suitable container and place in a freezer. In such case you must take the mixture out of the freezer every hour and whisk thoroughly with a beater for the first three hours and then let it set for several hours.
5. Allow kulfi gets soften by keeping it out of freezer for about 10 minutes.
6. Garnish with sliced Pistachio.
Note: If you like to use Almonds in place of Pistachios then use half cup of blanched almonds, cut into slivers.
For machine, always use rock salt to maintain the ice temperature.

Tips to Avoid
 Over Eating

  • Slow down, chew with purpose: Take at least 20 minutes to consume a meal. Taking longer to eat will make you feel as though you are eating more. Enjoy the conversation and companionship.
  • Eat only while sitting down: Much extra food in consumed on the run. Making it a point to sit down while eating will help you think about how much you are consuming.
  • Eat off smaller plates!
  • Drink a 12 ounce glass of water before eating: It will take up room in your stomach and make you feel less hungry.
  • Wait 10 minutes before snacking: Between meal snacks are usually impulsive acts. A wait before eating them will often make you realize you aren't hungry after all.
  • Keep the right stuff up front: Make such foods as fruit and vegetables readily available by keeping them in the front of the refrigerator shelves.

 Sun is Friend or an Enemy?

If I’ll say, the sun is our friend and enemy simultaneously then; question comes in our minds, how is that?  The answer is very simple, for example, food is necessary for our body because it provides nutrition to our body, but if we eat lot of food then your stomach will not digest all food, because of too much quantity of food and it upsets your stomach and its digestive system. Similarly we need sunlight for healthy body, but when sunlight increases more than limits of our need then it will damage our body. Most common example is sun burns of skin.
Today I’ll tell you about the bad effects of sunlight (Ultraviolet rays) on our eyes. Too much unprotected exposure to the sun can cause sunburn of our eyes that is same as skin burn, which is called  “Photokeratitis” in medical language. The symptoms of photokeratitis
are very clear. You’ll have pain in eyes, redness of eye, sensitivity from light and also watering of eyes. This condition can clear up with medication, but too much unprotected exposure in sun over a long periods of time can greatly increase the chances of Cataracts (clouding of the lens of eye) and at the same time it can  also damage the Retina (the most sensitive part of our eye). Both conditions can seriously impair your vision. You’ll have difficulty at nighttime also   and it can also cause difficulty in recognizing the colors. These conditions are rarely possible to reverse.
So, if you don’t want to damage your eyes by sun, then protect your eyes. The best colors for sunglasses are dark gray, green or brown. Contact lens wearers can get lenses that  filter  out  a lot  of  ‘UV (Ultra Violet) radiations’ but  these  lenses  cannot  cover  the  whole  eye  ball  which  is  exposed  to  the  sun, so they can use sunglasses with contact lenses.

I think today you got enough idea that how sun is bad for your eyes.

 The More you Do - The more You can Do
Assalam-O-Alikum,
How are your summer vacations going? Enjoying or are you killing your time by lying lazily and being bored. Vacations bring lots of free time for us but it is healthier to utilize this free time in constructive activities. Keeping in mind the importance of staying busy and active, I am taking this topic to pen down in this article.

Have you observed that most often, the ones who accomplish most tasks are the people with a busy, active routine? There is an old proverb that goes, "if you want something done, give it to a busy person."  Looks strange…right? Though it sounds weird but truth is like this. (By busy person I mean the one who is really putting efforts and not just pretending to be busy to fool others) We generally think that if some task has to be got done then it must be assigned to someone who has fewer duties to complete and lost of free time in hand, one who can accommodate to handle more because of his open schedules.  But the truth is reverse. If you want something done, give the job to someone that is already doing a lot. Do not hand it to someone that has a lot of free time as it is least likely that he will take the pain to get the task done, though he may act so. This is because the people who stay active and busy believe that “more you do, more you can do”.
See it for yourself by observing around you. The students who enroll for optional educational and skill classes are usually the ones who already have good amount of knowledge than their average classmate. Similarly, when a person starts an exercise it seems too hectic but with consistent efforts it gets easier, enjoyable and he can go further in it...the reason being the same- the more you exercise, the more you can exercise.
Time is too precious to be wasted. There is always some or the other work that can be done. We must never be complacent, as there is always more to learn, and more we can do. It is lovely to be active and busy. There is always some or the other volunteer service that you can perform. Keep looking for new outlets for creativity. Dream and make your goals. Dreams are achievable if you wisely ground your dreams with small, practical steps. Every step taken will move you closer to your goal’s accomplishment and will also boast your moral as a step accomplished means that   you can do more and more. Trusting your instincts works well too. You can achieve your goals by listening to your inner wisdom. Set challenges for your own self and experience the pleasure that comes when you successfully face them. Each one of us is gifted with various skills. Utilize your knowledge and your abilities because use it or loose it-that’s how it goes.

“An idle mind is a devil’s workshop”. Idle person is more liable to be prey to devil’s evil plans. So stay busy and not get dizzy. When you begin doing more, more things will come to you. If you only do what the average does, you will acquire what the average acquires. Remember, the average person never reaches the mountaintop because you can't get to the mountaintop with an average effort.

So dear fellows-make each day count to better yourself. Avail the opportunities and make something of ourselves.
