For
Boondi:
- 3\4 cup basin (gram)
- 1-2 level tsp. bicarbonate of soda
- 1 tsp. salt
- 1\2 tsp. chili powder
- 1 cup water
- oil for frying
For Assembly:
- 1 onion, thinly sliced
- 2 medium tomatoes, seeded and cut into small cubes
- 3 green chili, roughly chopped
- 2-3 medium sized boiled potatoes, cut into small cubes
- 1 tsp. salt
- 1 tsp. red chili
- 1 tsp.
garam masala
For Yogurt Sauce:
- 500 g.
plain yogurt
- 1\2 tsp. salt
- 1 clove garlic, crushed
1. Sift the
basin, bbicarbonate
of soda, chili powder and salt into
a bowl. Make a slight well in the centre,
add 1\2 cup of water and beat well with a wooden spoon or
electric beater. Add enough water a little at a time to make
a batter the consistency of thick cream. (The batter should
be thinner than pakora batter.) The mixing should be done as
quickly and lightly as possible. Leave to rest for 15
minutes.
2. Heat oil in a karahi or
deep fryer. Test the temperature
by dropping a small
amount of batter into the
hot oil. It should rise to the top at once.
3. Pour batter in polythene bag
and hold it like a piping bag, make about 3mm hole at the
base. Pipe boondi into hot oil.
Alternatively
hold a perforated spoon over the hot oil. Pour the
mixture little by little on
the perforated spoon to make
boondi.
Fry to a golden colour, turning once or twice. Remove with a
slotted spoon, drain on absorbent kitchen paper and then
soak the boondi in plenty of warm water for few minutes.
Press the boondi between
the palms carefully to squeeze out the water.
Assembly:
4. Place the boondi, potatoes, tomatoes,
green chilies and onions in a glass serving dish, Sprinkle
salt, chili powder and garam masala over the boondi mixture
and mix gently to coat the spices.
5. Whisk yogurt with 1\4 cup water,
salt and garlic to make a smooth paste
and pour evenly into the boondi mixture and stir gently.
6. Garnish with
Chat Masala and
Sweet Imli Chutney.

Keep garlic skins from
sticking to your hands while peeling
Soak the garlic flakes in a cup of water for five minutes
before peeling.

Insulin
pill hope for diabetics |

Diabetes patients could soon be able to
take a pill to control their condition
instead of repeated injections, researchers
have claimed.
Experts at the Robert Gordon University
in Aberdeen have found insulin can be
covered by a coating which means it could
eventually be taken orally. Currently, the
drug has to be injected so it is not broken
down before it reaches the bloodstream. The
development offers hope to patients with a
phobia of needles.
The research, presented at the British
Pharmaceutical Conference in Manchester,
shows that the coating means that insulin is
protected from enzyme breakdown.
Dr Colin Thompson, of the university's
School of Pharmacy, said: "We have been
working on developing an oral insulin
because studies show that a great many
people with diabetes fear injections. "Being
able to take insulin orally would have a
significant impact on the lives of many of
these patients - not just eliminating the
need for injections, but also offering a
much more convenient form of treatment."
People with type 1 diabetes rely on insulin
injections. Often, type 2 diabetes can be
controlled by diet alone or other oral
diabetes drugs. It is only as the disease
progresses that insulin may be needed. Type
2 diabetes is far more common than type 1.
Other scientists have also been looking at
ways to deliver insulin by mouth without it
being degraded in the stomach. Taiwanese
investigators are using a chemical found in
shrimp shells to protect the drug.
Inhaled insulin is already available to
those diabetics with a proven needle phobia
or people who have severe trouble injecting.

Marhaba Ramadan
Assalam-o-alikum, friends. The month of blessings-Ramadan
has begun. And we have started savoring the parathas at
sehrs and yummy delights at iftars. While we enjoy this
eating, we shall not forget the real spirit behind fasting.
Fasting is meant to teach us 'taqwa'. When we abstain from
eating all day long, we come to realize how disturbing the
hunger pangs are especially for the poverty stricken people
who hardly ever get enough to eat.
It is seen that during ramzan, some people become quite
irritable and tend to loose temper very quickly. At iftar
time, when everyone wishes to reach home soon, the traffic
gets in such a chaos. Without any concern for others, people
honk their car horns and get into fights at trivial matters.
This is all against the spirit of fasting.
The Prophet (PBUH) said that the best amongst people is the
one with the best character. The happy thing is that
attaining good character is achievable for everyone. The
month of Holy Ramadan provides us a golden opportunity to
train ourselves and become good humans. In Ramadan, the
reward of good deeds increases manifolds, so ideally, in
this blessed month we should try our best to do as many good
deeds as we can. Initially the task of displaying our best
behavior may seem challenging, but with the idea of 'sawab'
in our mind, we will be able to get the required thrust from
within ourselves. And the whole month's training will enable
us to carry this good behavior all year around too. We
should try to be humble and forgiving in accordance with the
true essence of Ramadan. We must show more respect for
elderly, concern for down trodden, love to all living beings
may it be human, animals or trees. Charity is another act
that embellishes good character. It is not right to say that
one has to be rich to be able to donate. Each one of us is
rich enough because while money makes one wealthy it is a
good, giving heart that makes one rich. If you don’t have
bucks to donate, give that beautiful smile of yours and make
someone's day, console the upset ones, share your knowledge…
Come to think of it and you will find 101 ways to 'donate'.
And once you start to give, you will be surprised to see how
Allah rewards you in return. May Allah always shower His
blessings on us and help us distribute ease and comfort to
others. Happy fasting!
Action Time
So back to school…Though the daily routine of home
assignments, tests and lectures do haunt but the joy of
meeting the school pals again cheers the mood of most school
goers. Right?
As discussed in the last article published in Independence
Day newsletter, youth can do a lot for their country. I was
delighted to hear how zealous our young ones are when my
cousin told me that on Independence Day, his group of
friends went to a local recreation park of their area, which
was in shambles being littered and neglected for months. The
bunch of folks spent the day there, collecting the litter,
sweeping the place and mowing the grass and bushes. Two of
them-interested in arts, took their paints and brushes and
turned the rotten looking benches into masterpieces by
giving them a good bright paint coat and then painting
colorful motifs on them. What a good way to spend a holiday
instead of dozing in front of TV. In doing so, not only did
they have a hearty day out, but they also did service to
their society. More than often we hear people grumbling
about government's apathy. Agreed, that government does have
a major role to play, but we as citizens also have a
considerable responsibility at our shoulder. If each of us
consciously start doing his/her share, that day is not far
when our country will be among the developed countries.
Youth is the hope of any nation-of a better tomorrow. The
foremost duty of youth towards the nation is to concentrate
on their studies. They shall divert their efforts towards
their studies. Unfortunately, the young ones of our country
lack the spirit of research and development. Folks, you must
instill in yourselves the spirit to learn, explore, innovate
and invent.
Our country is richly blessed. But we must use these
resources wisely. Currently our country is facing grave
shortage of electricity and drinking water. We can save lot
of electricity by limiting the luxurious use of electrical
appliances. If we control the use of air-conditions, make
such daily routine that most chores are managed during day
time when we don’t need tube lights, just imagine how much
of electricity will be saved and thus can be put for more
productive use. Same goes for water-the resource that we use
too wastefully. We let the tap run when brushing our teeth.
If we would turn the tap off, we will be saving gallons of
water daily. Water is a gift of God and we will be
questioned on Last Day if we waste it. Another arena where
we can serve is in helping to control pollution. Children
misuse paper a lot. I have often seen children tearing off
pages from their copy and wasting paper. Remember that such
act not only adds to garbage, but it also is waste of wood
as paper is made of wooden shavings. Save plants and trees.
What if each of us plant a tree at every national event? If
it happens so imagine the lush green Pak land we will have.
Another way of showing love for the country is be
respecting its norms and up living its cultural traditions.
We have such a varied culture. We need not imitate west. We
should adhere to our cultural norms.
We all claim to love our country. Let us show our love by
making concrete effort to work for its welfare.
