Potato Salad With Herbs

- 4 medium sizes potatoes
- 3 spring onions, finely chopped
- 2 tbsp. chopped parsley
- 1 tbsp. mint, chopped
- 3 tbsp. mayonnaise
- 2 tbsp. single cream
- 1 clove garlic, crushed
- 1 tsp. lemon juice
- salt and pepper 

1. Lightly scrub the potatoes and cook in boiling salted water for 10-12 minutes until just tender. Drain the potatoes, cool slightly then cut into large pieces.
2. Put the potatoes in a mixing bowl, add spring onions, mint and parsley.
3. Combine mayonnaise, cream, garlic and lemon juice and season well with salt and pepper.
5. Add mayonnaise mixture to potatoes and mix gently, until all the ingredients are well coated with mayonnaise mixture.
6. When ready to serve, line a salad bowl with crisp lettuce leaves and  Spoon the potato salad into the centre and sprinkle with chopped mint.

While storing green chilies, remove the stems. This will help the chilies to stay fresh for a longer time.

Toxic diets fuel child obesity

A small quantity - but a lot of calories

The increase in childhood obesity is being caused by addiction to "toxic", sugar-filled manufactured foods, a US researcher has claimed. Robert Lustig, a University of California San Francisco child health expert said high-sugar, low-fibre diets cause hormone imbalances. These then mean children overeat, he said in Nature Clinical Practice Endocrinology & Metabolism.
The number of overweight and obese children is rising in the US and UK.
One in four children in England are obese, official statistics published earlier this year showed.
And 'adult' diseases, such as type 2 diabetes, are being seen in children. Professor Lustig said food manufacturing practices have created a "toxic environment" that "doomed" children to being overweight. He added too much fructose [fruit sugar] and too little fibre in foods both act to boost insulin levels. Insulin acts on the brain to encourage eating by blocking signals that travel from the body's fat stores to the brain and by stimulating a pleasurable dopamine "rush" after eating.
'No choice'

Professor Lustig said food processing had changed over the last 30 years, with sugar being added to a wide variety of foods that never used to have it, and fibre being removed from many foods to create "essentially addictive" foods. He said children
could not be blamed for eating badly when they were offered such unhealthy options.
"The concept of personal responsibility is not tenable in children. No child chooses to be obese," he added.
"Young children are not responsible for food choices at home or at school, and it can hardly be said that pre-school children, in whom obesity is rampant, are in a position to accept personal responsibility."
"If we don't fix this, our children will continue to lose."
Catherine Collins, of the British Dietetic Association, said: "The energy density of today's diet means its relatively easy to eat a high calorie diet with what looks a very modest quantity of food on your plate.
'Blameless?'

"For example, a 50g bar of chocolate contains around 270kcal (calories) so has an 'energy density' of 5.4kcal a gram. But a 150g banana would provide around 140kcal.
"But I am not sure I consider the individual child/parent 'blameless'. "Children tend to have a higher energy need per kilogram of body weight than adults, which does translate into a healthy appetite. "And while children are not 'masters of their own destiny' as Lustig suggests, they do control their intake to some extent such as through pocket money."
She added: "We have to encourage children to choose non-food preferences to spend their money on, or to 'benchmark' their own diet against a healthy standard."

Pluto loses status as a planet
Pluto was discovered in 1930 by US astronomer Clyde Tombaugh
Astronomers have voted to strip Pluto of its status as a planet. About 2,500 scientists meeting in Prague have adopted historic new guidelines that see the small, distant world demoted to a secondary category. The researchers said Pluto failed to dominate its orbit around the Sun in the same way as the other planets.The International Astronomical Union's (IAU) decision means textbooks will now have to describe a Solar System with just eight major planetary bodies.

Assalam-o-alikum
Our nation celebrated another Independence day on this 14th. By the grace of God it was the 59th anniversary of Independence that we as nation enjoyed. The zeal of the nation was worth seeing. The youth especially put a great show. But sadly we forget that Independence Day is not only about observing the rituals, singing of national songs and chanting slogans.
I happened to be in Pakistan this year on 14th August and saw the festive mood of the public at display. It was nice to see people indulging in celebrations. But there were many such things that sent me to thinking, and the thoughts that came were not very bright. As the clock stroke 12 and 14th August started, one could hear the roaring fireworks. It is a happy sight seeing colors in sky, but one must remember the patients or elderly whose sleep is disturbed by the noise of fire cracks. Some extremist, show their happiness by firing in the air with their guns. This is highly condemnable act because it put lives in danger.
On the night of 14th August, the roads were jammed. It had been so fifteen years back also when we as little kids would go out to see the lighting on buildings in celebration of Independence Day. But the hooliganism was not there a decade ago. It seemed that our youngsters think that Independence Day is the time to drive about in motorbikes, do wheeling and put their and others lives at risk. The young boys did not abstain blocking the cross roads and putting dance displays. One of my friend whose mother was in hospital, had to face a lot of trouble to reach hospital in time to attend her ailing mother. The small flags that were used to decorate homes were scattered on the ground the next day. Where did the spirit go? Was it only for a day?
I may sound gloomy. But I just want to let the youth know that there are many constructive ways for celebrations. We as nation have right to make jubilant celebrations on Independence Day. But we shall not waste money on useless things.
We shall try to come up with the grave problems our country is facing in shape of poverty, illiteracy, unemployment etc. We have got freedom from the Imperial rule, yet the struggle has not ended. Our nation still has to work for progress and prosperity. That is true freedom.
