Cooking with
Exclusive Recipe

Alloo Cholay

- 1cup chickpeas, soaked overnight in plenty of water
- 6 cups water
- 1\2 tsp. bicarbonate of soda
- 1tsp. salt
- 1\4 cup. oil
- 1tsp. chaat masala
- 1 tsp. chilli powder
- 1 level tsp. ground cumin
- 1\4 cup
imli ka ras
- 2 large potatoes, boiled, peeled and cubed
- 1 onion, peeled and thinly sliced
- 2 medium tomatoes
- 2 green chillies, chopped

1. Put the chick peas in a large heavy-based saucepan, add the water, salt and the bicarbonate of soda and bring to  boil. Cover the pan and boil the chick peas for about 2 hours until they are tender but still retain their shape. This process can be speeded up in a pressure cooker. Use half the quantity of water. (Follow the manufacturer's instructions for timing.) Once the chick peas have become tender keep them in the boiled water. It will be used at a later stage.
Heat oil in a medium heavy based saucepan over medium heat. Add chaat masala, chilli powder cumin, imli ka ras, potatoes, chickpeas and water. Stir gently until well combined. Cover and cook over low heat for about 5-8 minutes.
3. Transfer to serving dish. Garnish with sliced onions, tomatoes and green chillies.

Fruit and vegetables
Fruit and vegetables are low in energy and packed with vitamins, minerals, protective plant compounds and fibre, so they're a great source of nutrients and vital for a healthy diet.

Due to their nutritional and health benefits, it's recommended that fruit and vegetables form the basis of your diet, with a minimum intake of five portions each day - about a third of your daily food consumption. Currently the UK averages two to three portions a day, so we're falling well short of the benefits they can provide.

Fruit and vegetables should be incorporated into every meal, as well as being the first choice for a snack. Population studies have shown that people who eat a lot of fruit and vegetables may have a lower risk of chronic disease, such as heart disease and some cancers. Health benefits can be gained from fresh, tinned (in natural juice), frozen, cooked, juiced or dried versions. Potatoes don't count though, as they're a starchy food.

How much is a portion?

  • One piece of medium-sized fruit, such as an apple, peach, banana or orange

  • One slice of fruit, such as melon, mango or pineapple

  • One handful of grapes or two handfuls of cherries or berry fruits

  • One tablespoon of dried fruit

  • A glass (roughly 100ml) of fruit or vegetable juice

  • A small tin (roughly 200g) of fruit

  • 3 tablespoons of fruit salad or stewed fruit

  • A side salad

  • A serving (roughly 80g) of vegetables, such as frozen or mushy peas, boiled carrots or stir-fried broccoli

  • Cooked dishes that contain significant amounts of vegetables may also count

So how do you ensure an intake of five portions a day? Here's a typical plan:

  • Glass of fresh orange juice or smoothie for breakfast = one portion

  • Small pack of dried apricots for mid-morning snack, instead of a chocolate bar or bag of crisps = 1 portion

  • Small pack of dried apricots for mid-morning snack = one portion

  • Side salad with lunch = one portion

  • Sugar snap peas and broccoli, served with main meal = one portion

  • Strawberries as dessert = one portion

Do remember that some fruits contain many of their nutrients just under the skin, so eating them with the skin on can provide greater nutritional benefits and the maximum amount of fibre compared with just drinking the juice of the same fruit.

 Celebrating the Strong Ties
Friends, I hope and pray that we all are and will continue to make most of this Holy month of Ramazan. Ameen.

Saudi Arabia
is the largest country on the Arabian peninsula. It is home to the two holiest cities of Islam, Mecca and Medina-the destination of Muslim pilgrims from across the world. Therefore Muslims all over the world, feel special association with the Kingdom and its people.
One of the hadith of the Holy Prophet (peace be upon him) says that a believer to another believer is like a wall of bricks supporting each other. In light of above, the Muslim-majority state of Pakistan and Saudi Arabia enjoy excellent, close and friendly, bilateral relations. As two of the world's leading Islamic countries, Saudi Arabia and Pakistan keep striving to develop extensive commercial, cultural, religious and strategic relations.
Saudi Arabia is a major destination for immigration amongst Pakistanis. Nearly a million Pakistanis immigrants are working here to boost the development of the Kingdom. In return of their professional services, through these Pakistanis foreign exchange is earned which is very valuable for our developing country. Pakistan has received more aid from Saudi Arabia than any country outside the Arab world since the past few decades. In the last decade of the past century, when Pakistan was facing economic sanctions for testing its first nuclear bomb, Saudis extended a generous help to the nation. Cheap subsidized oil given by KSA is critical for the development of Pakistan. Construction of many mosques and hospitals in Pakistan has been financed by the rulers of the Kingdom of Saudi Arabia. To honor their valuable contributions, Pakistanís major textile city of Lyallpur was renamed Faislabad. The name of Faisal Mosque in Islamabad has been named after King Faisal of Saudi Arabia. Saudi Arabia and Pakistan have been strong supporters of each others stance on various international issues. Pakistan is the Muslim country that boosts the strongest military force and is the only Islamic Nuclear state. To strengthen the army of the Kingdom of Saudi Arabia, the two countries maintain close military ties. Pakistan provides extensive support, arms and training for the Military of Saudi Arabia.
On 23rd of September, Saudi National Day is celebrated annually. The significance of this day for Saudi nation is like the Independence Day is for us. As Pakistanis, we feel equally delightful in sharing the joys with the people of the Kingdom of Saudi Arabia on this day because of the strong brethren feelings that we share. We feel great pleasure in expressing our heartfelt greetings and best wishes to the friendly Saudi people.
May Allah always keep these relations strong and help both countries to prosper. Ameen.
Till next time, Allah Hafiz.

Ms. Amna Tariq Holy City of Makkah-Ul-Mukarrama
