Spicy Potato Salad


- 6 small potatoes, peeled and cubed
- 2 tablespoons olive oil
- 2 medium onions, grated
- 1 tsp. chili powder
- 2 teaspoons curry powder
- 1tsp. salt
- 1clove garlic, crushed
- 2 medium tomatoes, chopped
- 1 tbsp. fresh mint, chopped
- 2 tbsp. fresh coriander leaves, chopped
- 3-4 green chilies, chopped
- 1 tsp. chaat masala


1.Cook potato in large pan of boiling water until just tender; drain.
2.Heat oil in medium, heavy-based pan add potato.
3.Cook over medium high heat until lightly browned.
4.Drain on absorbent paper.
5.Discard the oil from pan, leaving 1 tablespoon. Add onion and curry powder, chili powder and salt.
6.Cook 2 minutes over medium heat, stirring constantly.
7.Add the garlic and cook 1 to 2 minutes more.
8.Return potato to the pan and heat through. Add chopped tomato and cook gently to heat through.
9.Stir in mint coriander leaves and green chilies.
10.Transfer to a serving bowl, Sprinkle chaat masala serve warm.
