Mixed Vegetable Salad


- 500g Tomatoes
- 300g Cucumbers
- 200g Carrots
- 200g Lettuce
- 100g Green Bell pepper (Capsicum)
- 100g Red bell bepper (Capsicum)
- 2 Tbs Lemon juice
- Salt and peper to taste
- 2 Tbs fresh mint leaves

Wash all the vegetables well. Peel the cucumbers, carrots. Cut the tomatoes, lettuce into small pieces. Cut the green and red peppers into rings. Roughly chop mint leave.
Add lemon juice, salt and peppe. Mix together.
