Bean Burrito
Black Bean Burrito

Ingredients

- 2 cups canned black beans
- 1\2 cup jar chunky salsa
- 1 medium onion, cut into very small cubes

- 1 medium bell pepper, seeded and chopped
- 2 tsp. roasted red pepper, chopped (optional)
- 1 tsp. chili powder
- 1 tsp. lemon juice
- 8- 10 inch flour tortillas
- sour cream

- cheddar cheese

1. In a large bowl mix the black beans, salsa, onion, peppers, chili powder and lemon juice. If possible refrigerate over night to enhance the flavor. 
2. Microwave the bean mixture for about 2 minutes or heat over low heat for 5 minutes. Add little water if the mixture is too thick.
3. Spread one tablespoon of sour cream in the center of the burrito, then place three tablespoons of the mixture over the cream and sprinkle with cheese. Microwave until just heated through.
4. Fold the ends and then roll up.
5. Serve with extra sour cream and salsa.
