- 2 tbs. butter
- 3 large eggs, separated
- 2/3 cup evaporated milk
- 1 2/3 cup sugar
- 2 cups (100 g.) miniature marshmallows
- 1 tsp. vanilla
- 1/2 cup nuts
|1. Break chocolate into small pieces and melt in double boiler. Add
butter mix until smooth. Keep aside.
2. Whisk egg yolk, evaporated milk and sugar in a metal bowl to blend. Set bowl over saucepan of simmering water, whisk constantly until the mixture is thick, about 3 minutes. Add in marshmellows, warm chocolate, vanilla and nuts. Stir until marshmallows melt and mixture is smooth. Remove from heat and keep aside.
4. Beat egg whites in another large bowl until soft peaks form. Gradually add remaining sugar and beat until stiff but not dry. Fold 1\3 of beaten whites into chocolate mixture to lighten. Fold in remaining whites.
5. Pour in 9 inches square buttered pan, cool and cut into squares.
