Bean Soup With Sausage 

Ingredients

- 3 tbsp. oil
- 350 g. sausage, cut into thin rounds
- 1 medium onion, chopped
- 5 1\2 cups canned chicken broth
- 1 tsp. chilli powder
- salt and pepper to taste

- 2 (450 g.) can small white beans, drained
- 1/2 cup fresh coriander leaves, chopped
- 3 green chillies, finely chopped (optional)

- 3 tbsp. lemon juice
 

1. Heat oil in large heavy heavy based saucepan. Add onions and fry for 3 minutes, until soft. Add sausage,  Sauté until onion is tender, about 5 minutes.
2. Add broth, chilly powder, salt and pepper. Bring to boil, reduce heat to low and  simmer for about 5-8  minutes.
3. Add beans, coriander leaves, green chillies and lemon juice. and  cook  until the soup is thick, about 5 minutes.
Makes 4 servings
