Chicken and Barley Soup

Ingredients

- 2 tbsp. butter
- 2 tbsp. olive oil
- 1 medium onions, peeled and  chopped
- 1 small turnip, peeled and chopped
- 2 medium potatoes, peeled and chopped
- 1 stick celery, chopped
- 3 cups beef stock or canned beef broth
- 3 cups chicken stock or canned chicken broth
- 2\3 cup pearl barley
- 1 1/2 tbsp. chopped dried oregano
-  3 skinless boneless chicken breast halves, cut into 1/2-inch pieces
- 1/4 cup chopped fresh coriander
 

1. Heat butter and oil in a large heavy based  saucepan over medium heat. Add onions, sauté, until onions are soft.
2. Add vegetables; sauté 8 minutes. Add stocks, bring to boil. Reduce heat and simmer 15 minutes.
3. Add barley and oregano. Simmer until barley is tender, stirring occasionally, about 25-30 minutes.
2. Add chicken to soup; simmer until just cooked, about 8 minutes. Mix in coriander. Season with salt and pepper.
