Double Chocolate Muffins

Ingredients

- 1 3/4 cups flour
- 3/4 cup sugar
- 1/2 cup cocoa
- 2 teaspoons baking powder
- 1/4 teaspoons baking soda
- 1 egg, lightly beaten
- 1 1/4 cups milk
- 1/2 cup butter, melted
- 1 teaspoon vanilla
- 1 package butterscotch
chocolate chips

 

1. Preheat oven to 375F degrees and grease 12 muffin cups. Sift together flour, cocoa powder, baking powder and baking soda. Mix in sugar and make a well in the centre.
2. Lightly beat the egg with milk, butter and vanilla and  pour into the centre of the dry ingredients.

ix quickly and lightly just to blend the dry ingredients into the egg mixture. Do not over mix.
4. Stir in 1 cup
of chocolate chips and keep the rest for topping.
5. Divide the mixture equally between greased muffin
tins. 
6. Sprinkle reserved chocolate chips over the tops of the muffins. Bake for 20 to 25 minutes. Serve warm or cold.
