- 1 tsp. baking powder
- 1\4 tsp. salt
- 175 g. butter, softened
- 175 g. sugar
- 1 tsp. vanilla essence
- 3 eggs, beaten
- 100 ml milk
- 2-3 thin slices citron peel
|1. Grease an 8 inch round cake tin.
2. Sift the flour, salt and baking powder into a bowl. Cream the butter and sugar together until pale and fluffy, then beat in vanilla essence. Add the eggs little at a time, beating well after each addition.
3. fold in the sifted flour and milk with a metal spoon, (don't over fold).
4. Turn the mixture into the tin and sprinkle the citron peel on the top of the cake. Bake at 350F (180C) mark 4 for 35-40 minutes or until a skewer inserted in the centre comes out clean and dry. Turn out and cool on a wire rack.
