Potato Salad


-4 medium sizes potatoes
- 1 bunch of spring onions
- 2 hard boiled eggs, shelled and chopped
- 1 small lettuce
- 4 tbsp. lemon juice
- 125 ml mayonnaise
- salt and pepper 
For Vinaigrette
- 3 tbsp. oil
- 3 tbsp. white vinegar
- 1 tsp. dijon mustard
- 1 tbsp. lemon juice
- 1 tbsp. oregano
- salt and pepper


1. Lightly scrub and dice the potatoes and cook in boiling salted water for 10-12 minutes until just tender.
2. Combine the vinaigrette ingredients pour into a screw top jar and shake well.
3. Drain the potatoes and toss them in vinaigrette. Keep aside to cool.
4. Combine mayonnaise and lemon juice and season well with salt and pepper.
5. Wash, trim and finely slice the spring onions. Add potatoes, spring onions and eggs to mayonnaise mixture and mix well, until all the ingredients are well coated with mayonnaise mixture.
6. Break the lettuce into large leaves and use to line a salad bowl. Spoon the potato mixture into the salad bowl.
