Potato Salad With Herbs


- 4 medium sizes potatoes
- 3 spring onions, finely chopped
- 2 tbsp. chopped parsley
- 1 tbsp. mint, chopped
- 3 tbsp. mayonnaise
- 2 tbsp. single cream
- 1 clove garlic, crushed
- 1 tsp. lemon juice
- salt and pepper 

1. Lightly scrub the potatoes and cook in boiling salted water for 10-12 minutes until just tender. Drain the potatoes, cool slightly then cut into large pieces.
2. Put the potatoes in a mixing bowl, add spring onions, mint and parsley.
3. Combine mayonnaise, cream, garlic and lemon juice and season well with salt and pepper.
5. Add mayonnaise mixture to potatoes and mix gently, until all the ingredients are well coated with mayonnaise mixture.
6. When ready to serve, line a salad bowl with crisp lettuce leaves and  Spoon the potato salad into the centre and sprinkle with chopped mint.
