Red Cabbage Salad  


- 300 g. red cabbage
- 3 small carrots
- 2 small apples
- 1\4 tsp. French mustard
- salt and freshly milled pepper
- 2 tbsp. vinegar
- 6 tbsp. olive oil

1. Shred cabbage finely, discarding any coarse leaves. Peel, core and dice the apples. Peel and grate the carrots.
2. Place salt, pepper, mustard and vinegar in a small bowl and stir to dissolve the seasoning. Add olive oil and whisk until the mixture becomes emulsified and slightly thickened.
3. Place cabbage, apple and carrot in a salad bowl. Pour dressing over the salad and toss well to coat. Refrigerate for two hours.
