Refrigerator Biscuits


- 225 g. flour
- 1 egg, beaten
- 150 g. sugar
- 150 g. butter or margarine

- grated rind of 1 lemon
- 1\4 tsp. vanilla essence

1. Grease two baking sheets.
2. Cream together butter or margarine until pale and fluffy. Beat in egg and vanilla.
3. Stir in the flour and lemon rind. Mix to form a firm paste and knead lightly to a smooth paste. Wrap the paste and chill in the refrigerator for 25-30 minutes.
4 Shape dough into long roll about 2 inches in diameter and 8 inches long. Wrap in waxed paper clear plastic wrap. Refrigerate for at least 40 minutes.
5. Cut off 1/4 inch slices. Place on the baking sheets and bake in a 375F oven for 12-15 minutes. cool on a wire rack. Make about 30 biscuits.
